Let’s Get Started!

Step 1. The base

Using a mixer:

Tip the bread mix into the bowl of a food mixer that is fitted with a dough hook, pour in the warm water and olive oil and mix on a slow speed until the ingredients have combined.

Once combined, mix on a medium speed for about 5 minutes until the dough is stretchy.

By hand:

Tip the bread mix into a large bowl, make a well in the centre and add the warm water and olive oil. Mix with a wooden spoon until all the ingredients bind together to form a dough. Turn the dough out onto a lightly floured surface and knead for approximately 10 minutes or until it’s smooth and elastic.

.

Step 2. Leave to rise

Cover the bowl with a sheet of oiled cling film and then leave it in a warm place until it’s doubled in size (1-2 hours on a warm day or up to 4 hours on a cooler day).

When the dough has risen and looks springy to the touch, uncover and remove it from the bowl and knead it lightly on a floured worktop.

Handy Tip
Rub a little olive oil on your hands and the work top to stop the dough sticking.

.

Step 3. Topping

Preheat the oven to 200°C/Gas 6.

Split the dough into 3 or 4 pieces depending on the size of pizza you are making. Roll the dough out to the desired shape, either rectangular or round and place on the lined baking sheet.

Handy Tip
It’s quicker to roll the dough out but a professional cook would always say, use your fingers and palms to gently stretch out the dough and leave a 1cm ring around the outside edge untouched. This will give a light but crisp pizza base and a slightly puffed up crispy edge.

Spread 2-3 tablespoons tomato pasta sauce over the pizza.

Sprinkle grated cheese over the top.

.

Step 4. Bake

Bake in the centre of the oven for 12-15 minutes, or until the dough has risen and is a golden colour and the cheese has melted. Remove from the oven, drizzle with a little olive oil and tear some fresh basil leaves over the top. Use a pizza wheel to slice and serve immediately.
