Let’s Make Retro Lolly Style Cakesicles!

Cakesicles are basically a delicious blend of your favourite cake and frosting encased in a shell of chocolate or candy melt coating and once you have mastered the simple skill, there’s no limit to how many different designs you can create. In this project, the Cake Craft creative team will show you step by step how to make and decorate these three fun retro lolly designs.

You will need:

Edibles:

Sattina golden delight Madeira cake mix
Sattina vanilla frosting
White candy melts
Callebaut milk chocolate
Colour Mill lime food colouring
Colour Mill red food colouring
Sattina bright rainbow funfetti sugar strands
Pearlised rainbow nonpareils

Silikomart mini tango cakesicle mould (lolly sticks included)
Silikomart mini classic cakesicle mould (lolly sticks included)
Wilton disposable piping bags
Easybake non-stick baking parchment
Teaspoon

‘Fab’ Style Cakesicle

Creating The Outside Coating

We use white candy melts because they are easy to colour and do not need tempering. Simply place some candy melts into a suitable bowl and melt in the microwave for 20 second bursts stirring in between until they are completely melted. Pour approximately a third of the melted candy into another bowl and colour with Colour Mill red food colouring. Use a teaspoon to spread the red candy over the bottom of the Silikomart mini classic mould taking care to cover about a third then spoon the melted white candy into the rest of the mould spreading around the rest of the surface. Push a lolly stick in a third of the way up and brush some melted candy over the top to secure it in place. Wipe carefully around the edge of the mould to clean away excess candy and leave to set in the fridge for 10 minutes until firm.

Adding The Filling And Top Coat

Once out of the fridge, fill the candy coated cakesicle with a blend of your favourite cake and frosting. You can bake your own cake and use buttercream, use off-cuts from a cake, use cupcakes or even buy a sponge or Swiss roll; we used cupcakes made using Sattina cake mix and frosting. Whatever you decide to use, the method is the same – break the cake into crumbs in a bowl, then mix with your chosen frosting until you have a blended mixture that is slightly sticky and will compress together. Mould the mixture into a sausage shape and press into the mould ensuring that it sits below the surface level.

Remelt the red and white candy and spoon over the top until level with the rim. Tap gently to level out the candy and release any air bubbles, then pop back in the fridge to set. Once set, you can easily remove the cakesicles from the mould.

Decorating

To decorate a ‘Fab’ style cakesicle, melt some milk chocolate or chocolate candy melts in the microwave and leave to cool very slightly. Dip the top third of the cakesicle into the chocolate then sprinkle back and front with colourful sugar stands.

Place on a sheet of greaseproof paper and leave to set or pop in the fridge for 10 minutes until set.

Handy Tip
Cakesicles make lovely treats to take along when visiting family or friends so to make life easy, freeze any off-cuts of cake or even uneaten slices of cake. Then you will have a quick and ready supply to make your cakesicles when you need!

‘Twister’ Style Cakesicle

The Silikomart mini tango mould is the perfect shape for creating ‘Twister’ style cakesicles. To create the stripes, paint white melted candy into alternate strips then add a red dot to the top of the mould using a paint brush or ball tool. Pop in the fridge to set for 10 minutes.

Colour some white candy melts with Colour Mill lime food colouring, melt and spread over the top of the white strips completely covering the mould. Pop back in the fridge to set.

Fill with a sausage shape of the cake and frosting blend then cover with melted lime green candy. Pop back in the fridge to set.

Once set, remove the ‘Twister’ style cakesicles to show off their fabulous, retro style design.

‘Nobbly Bobbly’ Style Cakesicle

Use the Silikomart mini classic mould and coat with melted white candy melts. Fill with cake and frosting blend as for ‘fab’ style, then cover with more melted white candy. Once set, decorate by dipping into milk chocolate or chocolate candy melts then sprinkle completely over with coloured mini pearls back and front. Place onto a sheet of greaseproof paper then leave to set or pop in the fridge for 10 minutes.

Present your cakesicles individually gift wrapped in cellophane bags tied with ribbon, packaged in one of our fab cakesicle boxes with clear lids or popped in a display stand as the centrepiece on a dessert table.
