How To Decorate A Cake With Choco Drip Cake Icing

From playful cakes decorated in colourful drips, sprinkles and novelty toppers to classic and sophisticated chocolate drip cakes decorated in gold leaf and decadent chocolates, the drip cake phenomenon seems here to stay.
In this step-by-step tutorial, our Creative Team will guide you through how to get a seamless finish with perfect drips every time!.

We used:

Choco Drip in Yellow
Multicoloured Sugar Dot Funfetti Sprinkles (Edible Cake Confetti)
‘Party Animals’ cake topper set

 

Creating The Perfect Drip

Melt the choco drip in a microwave in bursts of 10-15 seconds. You may need to do this up to 5 times, but the trick is to shake the bottle well between each burst and when the bottle feels body temperature in your hand, start testing. To test, drip a little over the edge of an upturned cup first and if the temperature and consistency seems correct, test one drip on your cake. The icing should smoothly run down the side of your cake into a perfect drip and stop naturally; If the icing is too runny, let it cool down for a while and if it is too thick, pop back in the microwave for 10 seconds and shake.

 

Handy Tips
Start by making sure that the base coat on your cake, whether buttercream or sugarpaste, has a smooth finish as any lumps and bumps will show through the drip icing.
Chill your cake in the fridge first and this will help control the drips so that they do not slide all the way down the cake.

Once you have your drip icing perfectly melted, and you are happy with your ‘test drip’, start to pipe around the top edge of your cake so that it slides down the side.

It looks better if the drips are all different lengths.

Some people like to pipe all the way around the top edge first and create the drips then fill in the centre, but after testing, we got a smoother finish by working in small sections as shown, outlining each section first.

Once outlined, fill in the centre as quickly as you can, then move around to the next section.

Continue with this technique until the top of the cake is completely filled, and the sides decorated with natural looking drips of different lengths.

Finish With Sprinkles, Party Animals Toppers & Matching Ribbon

To achieve ‘the look’ on this cake, while the choco drip is still freshly wet, scatter colourful sprinkles over the top (we used Multicoloured Sugar Dot FunFetti for a pop of colour),

then, before the choco drip sets completely,

gently position and push in each piece of this funky jungle animal topper set.

Finally, finish by wrapping around a matching ribbon using a little icing or choco drip to attach at the back of your cake.
